The traditional ripening of coffee originated in the 18th century when grains harvested in Indonesia were transported to Europe by boat, forcing them to travel for several months. Stored in the wooden hull of the ships, the coffee beans were then exposed to moisture from the sea breeze and salt water, causing them to swell. They then dried in the sun, which altered the taste of the coffee obtained at the end of this long journey. In other cases, coffee was stored in Indonesia while waiting for the next boat for Europe. During this period, the grains were subjected to numerous fluctuations in temperature and sunlight. Each of these external influences had the effect of modifying the structure of the grains, affecting their way of reacting to the roasting and aromatic potential of the coffee.
Selection Vintage 2011 was conceived using a totally new method, fruit of the pioneering work of the experts of Nespresso. The latter wish to benefit from the effects of refining, but working under specific controlled conditions. The duration, the oxygen content, the humidity level of the air, the light and the atmospheric pressure are then as many parameters to be controlled. A system of rotating bags of coffee beans has also been put in place to ensure the ideal maturation process. As a result of this careful monitoring, freshly harvested Arabica grains from the green uplands of Colombia have been transformed into a Selection Vintage 2011 coffee.
